Is it possible to change an eWon COSY 141 LAN address using eCatcher?
No, not using eCatcher alone. You would need to connect with the Ewon using eCatcher, then use eBuddy or the web interface to change the LAN address.

I have a water distribution site that uses several different LAN subnets, and it would be nice to change the eWon’s LAN address without having to get one of the maintenance guys to connect his laptop to the eWon and attempt to use eBuddy. I noticed that I can reach my eWon using the web interface, but I have not been able to change the LAN address. Is it possible using the web interface, and if so, how?
You need to reboot the Ewon after changing the IP address. You can do that through the web interface as well.
