When using a laptop + eCatcher to connect to the LAN network of the eWon, how does eCatcher set the IP address of the laptop? Is it set to a static IP on the LAN network? Is it set to the static IP of the eWon?

It does not have an address on the LAN. It has a VPN address (TAP Adapter) which is routed to the LAN. This is handled automatically between the VPN Server and Client (eCatcher). eCatcher is an OpenVPN client.
