Is there a step by step guide to setup the sim card. I can connect the cosy to the wlan port and everything connects through my regular accounts, just can’t see it if I unplug the wlan port.

You just need to run the Internet Wizard and select modem for the connection. Then enter the correct APN (need to get this from the cellular provider) and leave the pin, username, and password fields blank and click Next.
