Is it possible with scripting on the eWon to create a simple JSON file and POST or FTP it to the server?
By doing this our customer would have a copy of the raw data locally on the flexy in case something breaks and a few JSON files are not sent out.

You can use Basic Scripting and Export Block Descriptors to create JSON files, and save to the Ewon unit. You will just need to be mindful of the storage space of the Flexy device, so you may need to overwrite files, or periodically clear the files for new JSON.
