is Eclipse absolutely necessary for the creation of a Java extension or is this also possible via Visual Studio code with the corresponding extensions/plugins?

Yes, it is possible to build java application for the Ewon Flexy without using Eclipse if you are familiar with Java. However, we do not have any documentation or extension support for Visual Studio Code at this time.
